Alba Cheese


Growing up on a small farming village named Sortino in Italy, Mario and Gaetano learned the secrets of making the finest Italian cheese as young teenagers. Their father taught them how to passionately and skillfully make the true traditional Italian cheese that is sought after by many.

When they arrived in Australia, the two brothers continued to work in the cheese industry in order to save enough to one day open the doors to Australia from their own factory.

In the late 70’s they bought three properties on Assembly drive as they envisioned their business to grow over time. In 1982 they opened their recently built factory and so began the early stages of Alba Cheese Manufacturing with only a handful of employees and producing 8,000 liters of milk a day. Over the years, production has grown due to the popularity of the cheese and the factory has been extended numerous times to accommodate for the demand.

In 2005 Alba Cheese purchased another property in order to expand yet again. They moved the Shredding and Grating line to the new premises and to extend on their well equipped maturing room. Alba is the Italian word for “Dawn”. When Mario and Gaetano named the business, they wanted a word that described their childhood memories and the freshness of the cheese they make.
